With fall in the air, it’s time for my favorite muffin – Pumpkin Spice. Here’s how they work:
1 box spice cake mix
1 can pumpkin
1-3 Tb water
1 1/2 cups chopped pecans
1-2 handfuls craisins
Mix spice cake mix and pumpkin, adding water 1 Tb. at a time until battery. Fold in pecans and craisins. Spoon into greased muffin tin. Bake at 350* until done. Muffins should be slightly crusty on top, and a toothpick should come out clean. Makes +/- 16 muffins. Enjoy!
